Ingredients: 1 zucchini (medium); 1 sweet potato; 1 onion; 2 eggs; 0 Spices of your choice (we used paprika, cumin, black pepper and chilli flakes); 1 avocado; 0 Meredith Dairy Goat Cheese; 0 Coriander; 1 red chilli (thinly sliced, seeds removed); 1 lime; 0 Olive oil; 0 Salt & pepper; 0 Optional additions: poached eggs, grilled halloumi, bacon, roasted tomatoes... get creative!

Criminally simple and hideously versatile.

This fancy brunch favourite will be on the table next weekend in 30 minutes or less.

1 zucchini (medium)
1 sweet potato
1 onion
2 eggs
Spices of your choice (we used paprika, cumin, black pepper and chilli flakes)
1 avocado
Meredith Dairy Goat Cheese
Coriander
1 red chilli (thinly sliced, seeds removed)
1 lime
Olive oil
Salt & pepper
Optional additions: poached eggs, grilled halloumi, bacon, roasted tomatoes... get creative!

Instructions

Grate your zucchinis and sweet potato. Sprinkle over a good pinch of salt to draw out any excess water from the veggies, then allow to stand for 15 mins.
Squeeze the excess moisture from the veggies using a clean tea towel, then mix zucchini, sweet potato, onion, eggs, and spices in a bowl. Season to taste with salt and pepper.
Over a low-medium heat, drop a quarter of your mixture into an oiled pan, then flatten into a round and cook until golden and set around the edges. Flip, then continue to cook for 2-3 minutes until the other side is fully cooked.
Set aside and cover with a tea towel to keep warm while you cook the remaining fritters.
Separately, smash your avocado with a good squeeze of lime, a glug of olive oil, and season generously with salt and pepper.
Top your fritter with smashed avo, Meredith Goats Cheese, sliced chillies, coriander leaves, and freshly cracked pepper. Add any other toppings you choose - we poached some hideous (yet delicious) eggs, and highly recommend that you do the same!
